Pie

I use the other half of the pumpkin to make this pumpkin pie.Get the recipe from videojug and modified a bit with my own style.The taste mmm~~ not too bad.















For the Pie Crust:
you can use a ready made short crust pastry base OR made by your own,
200g butter (softened)
100g icing sugar
1egg
380g plain flour
1 tsp vanilla essence

  • Beat butter + sugar till smooth.
  • Add in egg and beat well.
  • Lastly add in flour + vanilla and mix with hand into a dough.
  • Press dough onto your preferred pie mould and remember to prick some holes in the middle of your pie crust with fork to prevent your crust from rising.
For the Pie Filling:
850g pumpkin (chopped)
350ml cream
170g brown sugar
1tsp salt
3eggs + 1 yolk
1 tsp cinnamon,nutmeg(optional)

  • Cover the pumpkin with aluminium foil,bake for 30minutes.
  • Blend the roasted pumpkin to make a pumpkin puree.Set aside.
  • Add in brown sugar,cinnamon,nutmeg,salt into a large bowl and mix well
  • Whisk the egg with fork and add in to the brown sugar mixture
  • Next,pour in the pumpkin puree and mix a little.
  • Lastly,stir in the cream and mix well
  • Pour in the pie filling into your crust and bake for 40min for 160'C.
  • When the pie is ready cooked,let it cool and ENJOY~~

Pumpkin

I love to eat pumpkin and since its hard to find any ready cooked pumpkin soup here,try to cook it by my own.By the way,pumpkin is a good source of vitamin C:)
bought this pumpkin from the tamu ground(market) and only used half of it,still thinking what 2do with the other half.Nevermind,keep it in the fridge 1st.^^

Here is the list of the ingredients:
Serve 7-8 ppl
Creamy Pumpkin Soup

1kg pumpkin(cut into small pieces & bake it)
1 onion (sliced)
1 tbsp butter
3 garlic clove (peeled)
1700ml water
1 tbsp chicken stock
2tbsp of cream(i use whipping cream)


1/Cook the onion & garlic with butter and brown slightly.
3/Add in the peeled baked pumpkin & water.
4/Bring to a boil and simmer for 20 minutes
5/Season the soup with salt n pepper and remove from heat.
6/Bring in the soup into a blender and blend the soup.Add in the cream at this moment and continue to blend.You'll need to do this in batches or else your blender will b overflow.
7/Transfer the blended soup into another pot or bowl.
8/Pour the soup in a bowl,sprinkle some baked croutons and serve~~


for the Croutons(bread crumble):
a pinch of nutmeg,cinnamon
1tbsp sugar
1tbsp olive oil
2-3 slices of wholemeal bread(cut into small cubes)


1/Preheat the oven to 180'C.
2/Sprinkle the bread into a tray and sprinkle the nutmeg,cinnamon,sugar and olive oil and mix well.
3/Bake for 7minutes till brown and crispy.

Finally

First time blogger here^^
Actually want to have a blog long long time ago,but always came with lot of excuse 'what to write,what to share,next time next time' and am thinking now how many next time would i have if am not gettin started now..
